Ippin Junmai Daiginjō (純米大吟醸 一品)

Ippin Junmai Daiginjō (純米大吟醸 一品) is made of Yamadanishiki rice milled to 50%. It has a mellow ginjō aroma and an elegant sweetness. Recommended chilled around 10-15°C. It won the Double Gold Award at the San Francisco International Wine Competition in 2014, 2018 and 2019 and was served at ANA's Narita Airport international flight lounge in 2017.

Yoshikubo Brewery was founded in Mito, Ibaraki Prefecture, in 1790 by Yoshikubo Seizaburō (吉久保清三郎) under the name Awanoya (粟野屋). Seizaburō was a rice and grain merchant who believed that Hitachi's rice and water would be ideally suited to brew high-quality sake. In the early Meiji era, "Ippin" became the company's leading brand. The brewery burned down in the massive air raids on Mito in 1945. It was incorporated in 1952. The current master brewer is a Nanbu and Hitachi Tōji. Yoshikubo Hiroyuki runs the brewery in the twelfth generation.

Yoshikubo Satoshi, a scion of the Yoshikubo family, moved to Sydney in 2011 and started to promote Ippin sake down yonder. Read more about Ippin in Australia and New Zealand here.

Fruity aroma (strawberries, peach, and pineapple), smooth with a dense texture and a deep and rich character; earthy, sweet, fruity flavours; slightly bitter on the palate with a tiny sour tingle, long bitter finish. Sublime! We were tempted to give it five stars.
