Yoshikubo Brewery was founded in Mito, Ibaraki Prefecture, in 1790 by Yoshikubo Seizaburō (吉久保清三郎) under the name Awanoya (粟野屋). Seizaburō was a rice and grain merchant who believed that Hitachi's rice and water would be ideally suited to brew high-quality sake. In the early Meiji era, "Ippin" became the company's leading brand. The brewery burned down in the massive air raids on Mito in 1945. It was incorporated in 1952. The current master brewer is a Nanbu and Hitachi Tōji. Yoshikubo Hiroyuki runs the brewery in the twelfth generation.

Yoshikubo Satoshi, a scion of the Yoshikubo family, moved to Sydney in 2011 and started to promote Ippin sake down yonder. Read more about Ippin in Australia and New Zealand here.

A nose of chocolate and overripe figs. Fruity approach (berries and banana) with hints of fungi. Dry and light-bodied with refreshing acidity, excellent umami mid-palate, and a bitter finish. Very mild and elegant.
