Inoue Sake Brewery was founded in 1789, when Matsudaira Sadanobu, the then-senior councillor, implemented the famous Kansei Reforms. It was also just after the Tenmei famine, and the times were not necessarily peaceful. Despite turbulent times in history, Inoue has been making sake in the fertile soil of the Ashigara Plain for over 230 years. Today's brewery builds on the inquisitive spirit of successive brewers who did not get swept away by the waves of the times.

Inoue Shuzō's brands are Hakoneyama (箱根山), Hakonebara (箱根薔薇), Sagan (左岸), Suijō (推譲), and Yumetakao (夢高尾).

It has a faint nose of dried fruits, grain, and a hint of banana, leading to a mild and savoury entry with a creamy texture and a clean mouthfeel. Its pleasant taste, reminiscent of nuts and steamed rice, brings a touch of sweetness, bitterness, and slight acidity, resulting in a medium-dry profile. The balance of flavours leans towards a matured taste, offering a well-crafted umami finish with lingering banana notes. This simple, rustic sake is perfect for a leisurely evening and is best enjoyed chilled or at room temperature to appreciate its balanced flavours fully. However, it might be challenging to find outside Kanagawa.
