Ikekame Junmai Daiginjō Muroka Namagenshu (池亀 純米大吟醸 無濾過生原酒) is an unfiltered, unprocessed, and unpasteurised sake made of Yamadanishiki (kōjimai) and Yume Ikken (kakemai) milled to 50%. It is a namazake that is available around the year. It has the elegant aroma typical of Junmai Daiginjo, with a slight sweetness and subtle spiciness. The overall impression is a strong, deep flavour.

Ikekame Brewery in Kurume, Fukuoka Prefecture, was founded in 1875 on the banks of the Chikugo River by the first-generation Genzō (池亀源蔵), an instructor and master swordsman in the Kurume Domain. Genzō was an enterprising man who devised a new brewing method using the water of the Chikugo River and contributed to sake brewing in the Chikugo region by sending out master brewers he trained. In May 2007, the brewery released its signature product, Kurokabuto (黒兜) Junmai Ginjō.

Ikekame's Junmai Daiginjō Muroka Namagenshu sake is an unfiltered, unpasteurised, and undiluted jewel. We ordered this bottle from Jizake, and it arrived in a coolpack. It has a clear, lemon-green appearance and exudes the elegant aroma typical of Junmai Daiginjo when poured into a glass. The nose is clean and medium-intense, with a sweet aroma reminiscent of peach, strawberry, and melon. It falls in the medium dry/sweet category, with balanced acidity, umami, and alcohol levels. The flavour is fruity, particularly highlighting the aroma of strawberry. Smooth texture. Medium-intense tail with slight bitterness and a refreshing sour tingle. Overall, a solid and deep flavour.
