Ikekame Brewery in Kurume, Fukuoka Prefecture, was founded in 1875 on the banks of the Chikugo River by the first-generation Genzō (池亀源蔵), an instructor and master swordsman in the Kurume Domain. Genzō was an enterprising man who devised a new brewing method using the water of the Chikugo River and contributed to sake brewing in the Chikugo region by sending out master brewers he trained. In May 2007, the brewery released its signature product, Kurokabuto (黒兜) Junmai Ginjō.

Ikekame Daiginjō Kamejirushi has a fruity nose with hints of strawberries, ripe bananas, and green apples. Its mild and mellow entry gradually transforms into an elegant and refined mouthfeel, showcasing the finest ginjo aroma. The balance between subtle acidity and slight dryness adds depth to the flavour profile. The long and refreshing finish, accompanied by a pleasant sour tingle, makes it a perfect choice for special occasions.
