Hirata Gokukarakuchi Tokubetsu Junmai Hidanohana (極辛口 特別純米酒 飛騨の華) is an extremely dry (極辛口) sake boasting a sharp spiciness and acidity, along with a robust rice flavour. Made with Hidahomare and Isehikari rice, it goes well with meat dishes, especially venison. Recommended at room temperature or heated up. Label design by Shirakawa Munehiro (白川宗弘), owner of Mianya Shirakawa 麵屋しらかわ).

Hirata Brewery in Hida Takayama was founded in 1769. Takayama is almost in the centre of the Japanese archipelago, surrounded by the 3,000-metre-high Hida Mountains. The Hirata were merchants dealing in hair oil and candles in the centre of Hida Takayama. The fifth generation of the Hirata founded the brewery in the Meiji era (1868-1912).

Hidahomare is Gifu's leading rice for sake brewing. In winter, the snow in the Northern Alps moistens the rice fields as subsoil water, and the rice grown there absorbs plenty of nature's bounty. The large grain size, low protein content and high expression of heart white make it ideal for premium sake brewing. Sake made from Hidahomare has a good balance of taste. Hidahomare is used in Hirata's Hida no Hana (飛騨の華) and Hiro (飛鷺), making them excellent 'Gifu jizake'. The brewery uses soft subsoil water from the Northern Alps.

In 2021, Hirata added three new brands: Shōryū no Mai (昇龍乃舞), Takayama (多賀山), and Hiro (飛鷺).

Hirata's Gokukarakuchi Tokubetsu Junmai Hidanohana is remarkable in many ways. Gokukarakuchi translates to "extremely dry", which is not an exaggeration considering its nihonshudo of a staggering +17! It has a fruity nose of apples and pears with distinct notes of spiciness. An epitome of dryness, it is sharp and spicy mid-palate, with sweet overtones reminiscent of blueberries followed by a tsunami of sourness and a spicy, citric finish. Lingering acidity. Very unique and probably well paired with deep-fried seafood. For sake, quite strong at 18%. Even if you are not a friend of karakuchi flavour, this is one to try.
