Hatsumidori Junmai Ginjō Muroka Namagenshu (初緑 純米吟醸 無濾過生原酒) is the fruitiest and the most popular sake in the Hatsumidori line. It is made from Yamadanishiki rice grown in Hyōgo Prefecture. The sake is bottled directly from the vat in winter and left unpasteurised. The ginjō aroma is reminiscent of melon, green apples and other fresh fruits, and the well-balanced richness and mouthfeel are exceptional. Serve in a wine glass or other thin glass.

Recommended food pairings: sashimi, grilled fish, chawanmushi (steamed egg custard), tempura, grilled mushrooms, chicken mizutaki, grilled chicken with salt, seafood salad, seafood pizza, dishes that make the most of the ingredients or are lightly seasoned.

Since its establishment in 1720, Okuhida Shuzō has operated its sake brewery in Kanayama, Gero, which prospered during the Edo period as a post town. Their sake is made from clear underground water that could only be obtained where the clear-flowing waters of the Hida River and Maze River converge. Centring on locally produced Hidahomare rice—an excellent rice variety for sake-making—Okuhida's representative sake brands are Okuhida and Hatsumidori. As a sake-making museum, Okuhida's Brewery Headquarters was designated by Gifu Prefecture as a "Street Corner Art Museum", where there are old account books and various precious artefacts from days gone by on display, including old sake-making tools and Girls' Festival dolls dating back some two-hundred years.

Clear, with a straw-coloured appearance and a slightly high viscosity. Fruity nose (melon, pear, banana) with herbal notes. Herbal flavours with hints of mint, nutmeg, and spices. Mild on the palate with moderate sweetness spreading; medium body. Very elegant and well-balanced, with a soft finish.
