Hananomai Junmai Daiginjō Yamadanishiki (花の舞 純米大吟醸) was crafted by Hananomai Shuzō in Hamamatsu for UCOOP, a cooperative that operates in Kanagawa, Yamanashi, and Shizuoka and has its contract farmers. The Yamadanishiki rice was grown by members of the cooperative and milled to 50%. It is a Shinmai Shinshu (新米新酒) produced in the winter and has a slightly dry and refreshing taste that can be enjoyed not only on special occasions but also with everyday meals.

Hananomai Shuzō is located in Hamamatsu, Shizuoka Prefecture. The brewery was founded in 1864 by Takada Ichisaburo (高田市三郎) in Miyaguchi, Aratama Village, Omi Province. The brand name Hana no Mai (花の舞) comes from an old traditional dance in the Tenryū River (天竜川) system. The large roof of the warehouse still retains the appearance of the time when it was founded. Hananomai uses only rice grown in Shizuoka Prefecture.

This is not Hananomai's "proprietary" Junmai Daiginjo but produced for Ucoop, a cooperative operating in Kanagawa, Yamanashi, and Shizuoka. It is made with Yamadanishiki rice grown in Shizuoka. The Ucoop brand has a fruity nose of grapes and strawberries and a scent reminiscent of white wine. A sweet and fruity approach that melts away into elegant sourness mid-palate and a lingering finish with an intensely bitter and peppery tingle—a veritable rollercoaster of flavours but consistently mild and never obtrusive. Quite passable.
