Hanami Sake no Jōzen Josui Junmai Ginjō (花見酒の上善如水 純米吟醸)

Hanami Sake no Jōzen Josui Junmai Ginjō (花見酒の上善如水 純米吟醸) is made of rice grown in Niigata and has mild umami with a refreshing aftertaste. Crafted for the spring season, it unveils a highly versatile character depending on its temperature:

  • Chilled (冷やして, 5-15 degrees): a gorgeous fragrance reminiscent of flowers typical of Junmai Ginjō. Refreshing taste.
  • At room temperature (室温で, 20 to 25 degrees): more aroma and mild taste.
  • With hot water (お燗で, 45-50 degrees): Moderately modest aroma. The umami is thicker, and the aftertaste is sharp.

Recommended food pairings are seafood ajillo, cream cheese marinated in sake lees, fried oysters, oden, grilled mackerel, fried chicken, and sake-steamed clams.

Shirataki Shuzō was founded in 1855 by Minatoya Tōsuke (湊屋藤助). The brewery served travellers and peddlers in Yuzawa, a strategic hub on Mikuni Kaidō (三国街道) linking Echigo and Edo on the Nakasendō. Echigo-Yuzawa, the setting of Kawabata Yasunari's 'Snow Country', is located in the Uonuma region of Niigata Prefecture, an area with one of the world's heaviest snowfalls. Plenty of snow melts in spring and seeps into the ground, becoming limpid groundwater over fifty years. The water drawn from three wells on the brewery's property is soft water suitable for brewing and used to make the company's sake.

Fruity nose of strawberries and green apples. Very light and thin approach, sweet and earthy mid-palate, medium dry with mellow umami and a trace of crisp, refreshing bitterness.
