Hamada Kōjō Miyamanishiki Junmai Daiginjō

Hamada Kōjō Miyamanishiki Junmai Daiginjō is made of Miyamanishiki rice, one of Japan's most famous rice varieties for sake brewing, milled to 45%, characterised by a gentle fragrance that harmonises with the aroma of steamed rice.

Very fruity nose of strawberry and green apples, rich and earthy with a fruity nose and slight acidity on the finish. Nice umami, with a good balance of sweetness and acidity. The Miyamanishiki version beats even their Yamadanishiki iteration.
