Gyokusendō Mukade Daiginjō Hanayaka (むかで 大吟醸 華やか) has a rich flavour and a gorgeous aroma. It is a seasonal muroka namagenshu (unfiltered and unpasteurised sake) made of Yamadanishiki rice polished to 50%. The moderately fragrant and floral impression, unique among the Mukaze brands, gives it a Daiginjō-style character and matches the gentle and rich flavour of the soft brewing water.

Gyokusendō Brewery is located in Yoro City, Gifu Prefecture. It was founded in 1806, and the company was established in 1934. Gyokusendō produces sake, shochu, mirin, liqueurs, spirits and whisky. In 1957, the brewery changed its name to Gyokugiku (玉菊). It launched its Shirataki (醴泉) label in 1987 and Minōgiku (美濃菊) in 1989. The same year, Minōkiku won the gold medal at the National New Sake Competition.

For more information on why Gyokusendō Brewery depicts centipedes on their labels and on the significance of mukade (centipede) and mukaze ("no wind"), please read our review of their Junmai Mukaze Betsukoshirae. Mukade Daiginjō Hanayaka is another jewel in the brewery's product line, only released once a year. It has a fruity nose of strawberries and - mid-palate - equally fruity notes of strawberries, pineapple, and custard. Medium body with a slightly creamy and viscous texture. Light acidity and medium umami. Robust and fruity approach with hints of fungi, slight bitterness mid-palate, and soft acidity with a short finish. Minimal acidity present. Spectacular.
