Gyokusendō Minogiku Junmai Hidahomare (玉泉堂酒造 美濃菊純米飛騨誉) is made of Hidahomare rice produced in Gifu and milled to 65%. It is a typical local sake from Yoro, where Gyokusendō is located. After bottling, it is matured in the bottle for more than six months in cold storage to give it a fuller flavour. Minogiku Junmai is characterised by the clarity of the brewing water and the lingering aftertaste.

Gyokusendō Brewery is located in Yoro City, Gifu Prefecture. It was founded in 1806, and the company was established in 1934. Gyokusendō produces sake, shochu, mirin, liqueurs, spirits and whisky. In 1957, the brewery changed its name to Gyokugiku (玉菊). It launched its Shirataki (醴泉) label in 1987 and Minōgiku (美濃菊) in 1989. The same year, Minōkiku won the gold medal at the National New Sake Competition.

Fruity nose of green apples and spices with some sweet overtones. Creamy, silky texture with a medium body. Smooth attack, not weak but mellow. Mid-palate, the initial sweetness transcends into spicy acidity—a sharp finish. The Minogiku is another prime example of the hidden powers of Hidahomare rice.
