Fukumitsuya Kagatobi Yukijunmai Organic (加賀鳶 有機純米) is made of domestic organic rice and milled to 65%. The brewery has been working with contract farmers since 2005 to grow organic rice and has obtained strict organic certification for the sake in Japan, the USA and the EU. Kagatobi Yukijunmai has a gentle aroma of steamed rice and a good balance of sweetness and acidity. Recommended food pairings are sesame tofu, soy milk pot, hot pot, shabu-shabu (with sesame sauce), grilled red sea bream, grilled vegetables, and grilled chicken.
Organic certification
To be classified as JAS-certified organic, agricultural products must be grown in designated fields without pesticides and organic fertilisers for at least three years. From rice washing to bottling, the brewing process must be carried out in a processing plant that meets the organic certification standards. In the certification process, inspectors from the certification body visit the farmland and the processing plant directly and conduct a rigorous on-site inspection, which must be carried out once a year to continue the certification. Only after these strict conditions are met can organic certification be granted.About the brewery

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.
