Fukumitsuya Brewery in Kanazawa, Ishikawa Prefecture, was founded in 1625. The culture of Kanazawa flourished during the Edo period when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquer craft and ceramics. The town, surrounded by the sea and mountains, has also enjoyed rich food culture. Today, it is known as a modern city with a history of old traditional Japanese culture appreciated to this day. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.

Kagatobi Junmai Daigingō Ai comes in an elegant blue-coloured bottle; hence its name, Ai (藍): Ai-iro (藍色) means "indigo", diffusing a flair of elegance and grandeur. It is made of Yamadanishiki, the pinnacle of Japanese sake rice. The Ai boasts a nose of liquorice, anise and other spices. It is light-bodied and crisp and has a refreshing acidity based on a delicious layer of delicate sweetness. The stimulating aroma of anise and green ends in a peppery tail and tingling sourness.
