Fukumitsuya Kagatobi Gokkan Junmai Karakuchi (加賀鳶 極寒純米 辛口) is made of carefully selected sake rice: Yamadanishiki from Naka Ward in Hyōgo, Kinmonnishiki from Kijimadera in Nagano, and Gohyakumangoku from Fukumitsu in Toyama. The Kagatobi line is committed to spicy and crisp sake that is not only dry but also abundant in umami, a virtuosity brought forward by pursuing traditional junmai-zukuri techniques: slowly fermented at low temperature during the harsh winter, the most suitable time for sake brewing, it is a "delicious dry" that is light and crisp, yet has a generous flavour of rice.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquer craft and ceramics. The town, surrounded by the sea and mountains, has also enjoyed rich food culture. Today, it is known as a modern city with a history of old traditional Japanese culture appreciated to this day. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.

Kagatobi Karakuchi Junmai is worth revisiting. There's not much we can add to last year's notes: beautiful golden appearance with a wonderfully spicy nose of dried fruits and nectarines; creamy, silky texture. Sublime.

Crisp, dry, and spicy are the Kagatobi series' main characteristics. The brewery calls it "delicious dry" (旨い辛口 umai karakuchi). It boasts an intensive aroma of koji, dried fruits, and nuts and an equally intensive flavour of herbs and almonds. Dry, crisp, with great umami and a sour tingle. A slight sweetness mid-palate and a peppery finish.

Gokkan (極寒 「ごっかん」) translates to "extreme cold" and refers to its low-temperature fermentation.
