Fukumitsuya Kagatobi Gokkan Junmai Karakuchi (加賀鳶 極寒純米 辛口) is made of carefully selected sake rice: Yamadanishiki from Naka Ward in Hyōgo, Kinmonnishiki from Kijimadera in Nagano, and Gohyakumangoku from Fukumitsu in Toyama. The Kagatobi line is committed to spicy and crisp sake that is not only dry but also abundant in umami, a virtuosity brought forward by pursuing traditional junmai-zukuri techniques: slowly fermented at low temperature during the harsh winter, the most suitable time for sake brewing, it is a "delicious dry" that is light and crisp, yet has a generous flavour of rice.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.
