Fukumitsuya Junmai Ginjō Kagatobi Umekichi (加賀鳶 梅吉 純米吟醸)

Fukumitsuya Junmai Ginjō Kagatobi Umekichi (加賀鳶 梅吉 純米吟醸) is made from domestic rice and "flower yeast" (花酵母) isolated from cherry blossoms. It has a gorgeous aroma, a light ginjō flavour and a refreshing aftertaste. Kagatobi were the firefighters of the Kaga domain's Edo residence. The label features Umekichi (梅吉), the head steeplejack, gallantly cutting a figure. Umekichi was a protagonist in a kabuki play called Mekura Nagaya Ume-ga-Kagatobi (盲長屋梅加賀鳶) by Kawatake Mokuami (河竹黙阿弥, 1816-1893).

Flower yeast is isolated at the Department of Brewing, Junior College of Tokyo University of Agriculture.

Recommended food pairings: sweet prawn sashimi, raw oysters, snowy white fish, wakatake stew, fish dishes with herbs, caprese.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquer craft and ceramics. The town, surrounded by the sea and mountains, has also enjoyed rich food culture. Today, it is known as a modern city with a history of old traditional Japanese culture appreciated to this day. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.

Overall impression: light flavour and a sharp taste. A nose of fungi and koji, with hints of caramel and a tingle of alcohol. Very mild and subtle, with notes of fungi and a spicy finish.
