Fukumitsuya Junmai Gingo Kagatobi Noto Reconstruction Support Sake (加賀鳶 能登復興支援酒)

Fukumitsuya Junmai Gingō Kagatobi Noto Reconstruction Support Sake (加賀鳶 能登復興支援酒) is part of a project launched in March 2024 by the Ishikawa Federation of Sake Brewers' Associations (石川県酒造組合連合会 Ishikawaken Shuzōkumiai Rengōkai), in which 18 participating breweries will release Noto recovery support sake to finance the reconstruction of Noto Peninsula after the terrible earthquake on 1 January 2024. For each bottle sold, 100 yen will be donated to Ishikawa Prefecture. Another 100 yen will go to the Ishikawa Sake Brewer Association to help the Noto breweries affected by the natural disaster rebuild their businesses.

Fukumitsuya, one of the biggest breweries in the prefecture, released its Kagatobi Junmai Ginjō, which is carefully prepared using traditional Ginjō brewing techniques. It has a rich, expanding Ginjō aroma and a crisp taste that brings out the flavour of the soft, swelling rice.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquer craft and ceramics. The town, surrounded by the sea and mountains, also enjoyed a rich food culture. Today, it is known as a modern city with a history of old traditional Japanese culture appreciated to this day. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience and were highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made of high-quality sake rice and the local groundwater; its variety of tastes is reminiscent of the Kaga firefighters.

The Kagatobi Support Sake is brimming with aromatic layers. Its nose reveals a medley of strawberry, banana, and melon accompanied by a subtle alcoholic presence. On the palate, a refreshing sensation unfolds into a harmonious blend of fruitiness that strikes a poised equilibrium between sweetness and a rejuvenating acidity, leaning towards a medium-dry profile. A long and lingering finish leaves a pleasantly sour zest lingering on the taste buds.

We found it in our local OK supermarket. For each bottle sold, two hundred yen will go towards the reconstruction efforts of Ishikawa Prefecture and the Ishikawa Association of Sake Brewers.
