Fukumitsuya, the oldest brewery in Kanazawa, is famous for its Kagatobi brand. This junmai daiginjo is labelled "Kagamatoi",
a brand not listed on the brewery's website. I assume it is a co-production between Fukumitsuya and Mitsubishi Shokuhin. It has a spicy nose and boasts a well-balanced sweetness with herbal notes and great umami with spicy overtones and a tangy finish. It has quite a mild flavour and goes well with salt-grilled sweetfish, wild vegetable tempura, mizutaki, and marinated lemon-flavoured salad. We paired it with sashimi.
