Daishinshū Brewery is located in western Matsumoto, Nagano Prefecture. It was founded in 1948 by merging several regional sake breweries. In 1972, Daishinshū established a brewing facility in Nagano City (豊野蔵 Toyonogura) but moved bottling and shipping to Matsumoto. In the 1990s, the brewery gradually increased the production of premium sake. In the 2000s, Daishinshū focused on unfiltered, unprocessed, once-pasteurised (無濾過原酒・一回火入れ muroka genshu ichikai-hiire) sake and earned a reputation for high-quality sake.

Even in the days when Daishinshū brewed sake in Toyono, the brewing water was drawn from a well located on the premises in Matsumoto. Before moving all operations to Matsumoto, the groundwater was transported over 100 kilometres to Nagano City. The new brewery is a steel-framed two-story building with a total floor area of approximately 1,500 square meters and was completed in 2020.

Daishinshū uses rice produced and milled by contracted farmers in Nagano Prefecture. There are currently ten farmers producing Hitogokochi and Kinmonnishiki. Kinmonnishiki has a mild and soft flavour and is used for the brewery's top line.

In 2022, Daishinshū introduced several membership types to increase its fan base. For an annual membership fee of 40,000 JPY, members receive two 720-ml bottles of specially prepared sake twice a year and can purchase seasonal items at discounted prices. There will be tasting events, rice planting and harvesting events, and special sake brewery tours in the future.

Daishinshu's Kantsubaki is a jewel. It's only available at the brewery store in Matsumoto and is part of Daishinshu's "Flower Series" (花シリーズ). Kantsubaki has a nose of apples and strawberries. Dry, with a lovely spiciness and a delicate balance of fruity sweetness and acidity. Its slight effervescence creates a tingling sensation mid-palate. It is quite strong. The brewery does not disclose any specs, but we can disclose it's heavenly! :)
