Chikumanishiki Sake Brewery is located in Saku, Nagano Prefecture.

Hara Mino no Kami Toratane (原美濃守虎胤, 1497–1564), one of Takeda Shingen's Twenty-Four Generals, was feared as the 'Oni Mino'. His son, Hara Ōkuma Mamoru Toramasa (原大隈守虎昌), saved his master's life as a bannerman in the Battle of Kawanakajima and was awarded the land of Saku Iwamurada by the Takeda clan. Toramasa's son Jinzō (甚蔵) moved to Saku Iwamurada after the demise of the Takeda clan in 1582. In 1681, Wataru Hachirō (弥八郎), a descendant of Hara Jinzō, founded the brewery and the store called Yoshidaya (吉田屋), which exists to this day. In the Meiji period, Hara Jisuke (原治助) expanded the business into Tōkyō. Chikuma Nishiki Sake Brewery (千曲錦酒造株式会社) was formally established in September 1929. The company moved to its current location in 1962. In 1995, Uehara Yasunori (上原康徳) became the first tōji to be awarded the title of "Master Craftsman of Shinshū" by the prefectural governor.

We received this Tokubetsu Junmai along with a Daiginjo as a set from our Coop. I could not find any mention on the brewery's website, so I assume it's a limited release. This is excellent food sake with a nose of chestnuts and dried fruits. Very light body and mild in taste; with refreshing dryness and notes of nuts. Clean finish. It goes well with food of subtle flavour or hot pots. It becomes smoother and sweeter at room temperature and reveals an ever-tastier character.
