Azakura Tokubetsu Junmai Muroka Namagenshu Ōmachi (阿櫻 特別純米 無濾過生原酒 雄町) is made of organically grown Ōmachi rice from Okayama milled to 60%. It has a gentle aroma, but the robust, crisp taste of the Ōmachi and the clean acidity typical of Azakura are a perfect match for this refreshing and easy-to-drink sake. The Ōmachi rice variety was discovered in 1859 by a farmer in Takashima Village, Bizen Province (modern-day Ōmachi, Naka-ku, Okayama City). Currently, about 95% of the rice produced is from Okayama Prefecture. Due to the difficulty of cultivating it, production volume dropped sharply at one time, and it became known as the 'phantom rice.' Due to persistent demand from sake breweries, production volume has recovered, and in recent years, it has become a favourite of sake breweries all over the country. This variety is the root of the currently popular sake rice varieties Yamada Nishiki and Gohyakumangoku.

It should not be chilled too much to enjoy the full flavour of rice. Cool it down for a sharper and spiecier taste. The acidity accentuates the Ōmachi flavour.

Akakura Sake Brewery was established in 1891 in Yokote, Akita Prefecture, a town known for its snow-covered huts and the home of Azakura Castle (阿櫻城), also known as Yokote Castle (横手城). The brewery takes pride in the blessed natural climate and the passion of the brewers for sake brewing, which has been passed down for over 130 years. Our passionate brewers are brewing Akita-style cold-brewed sake using long-term, low-temperature fermentation techniques under the guidance of Akita's Yamauchi tōji Terui Toshio (照井俊男), one of Japan's top five master brewers. Azakura uses local rice from Akita. The sake is characterized by its gorgeous aroma and mellow taste, which are well-balanced and have a pleasant taste that you will never get tired of drinking.

Azakura, combined with Omachi, is a gift from heaven: it boasts a mild fruity nose with a potpourri of berries and herbal elements. The wild Omachi rice dominates the palate from the start, with its acidity spreading and enhancing the rice's flavour. Medium-bodied with an almost velvety texture, the acidity introduces spiciness and appealing bitterness, accentuating the umami of the Omachi. As it warms to room temperature, the Omachi's flavour deepens, revealing a berry-like sweetness. Azakura's distinctive characteristics are always evident regardless of the rice used, making this another outstanding namagenshu.
