Sawahime Junmai Ginjō (澤姫純米吟醸) is a jizake made of Hitogokochi rice polished down to a milling rate of 50%. Hitogokochi rice was created and registered in Nagano in 1995. It is more suitable for premium sake than Miyamanishiki rice (美山錦) which is also grown in northern Japan but has higher protein levels. Sawahime Junmai Ginjō is pasteurized in bottles. It has a refreshing and elegant aroma with a fruity bouquet of Granny Smith apples, apricots, and melons and a dry and crisp finish. It pairs well with rich and robust flavours.

About the brewery:

Shirasawa, the hometown of Sawahime Brewery, is located north of Tōkyō in Tochigi Prefecture. Shirasawa-juku was a post-town along Ōshū Kaidō (奥州街道), an ancient route that connected Edo (modern-day Tōkyō) with Mutsu Province in northern Japan. Shirasawa is known for its excellent water quality and its water wheels used since ancient times. Inoue Seikichi Co., Ltd., the company behind the Sawahime brand, uses this fertile soil and abundant water resources to produce sake rooted in the region.

The brand name 'Sawahime' was taken from Shirasawa, while the character hime (姫, princess) represents the products' elegance. Inoue Seikichi was the second-generation owner. The current brewmaster, Inoue Hiro, is a member of the Shimotsuke Brewers Association and known for his commitment to promoting Tochigi Prefecture and its produce. He is using local water and rice for the Sawahime brand. Inoue Hiro was awarded the title Brewer of the Year at the IWC Sake Competition held in London in 2010.

We had this one chilled. It has a lovely bouquet of fresh apples and a palate reminiscent of melon, apple, with a slightly nutty and peppery touch. Crisp finish. Very delectable, and on our "must try again" list.
