Kubota Hekijyu Junmai Daiginjō Yamahai (久保田 碧寿 純米大吟醸 山廃仕込み) is a junmai daiginjō brewed in the traditional yamahai style. Its robust and bold flavour harmonizes with a light, smooth and refreshing finish. The refinement of a daiginjō collaborating with traditional yamahai style creates a particular richness in taste. The brewery recommends to serve it slightly warmed to bring out its elegant and full-bodied taste, but it can also be enjoyed chilled. To be paired with savoury food such as grilled and roasted dishes.

About the brewery:

Asahi Shuzō Sake Brewing Co., Ltd. (朝日酒造株式会社) is based in Nagaoka City, Niigata Prefecture. Founded in 1830, Asahi Sake Brewery has been striving to create premium sake using Niigata's water and rice. The company was converted into a public company in 1920, and a distribution network called Asahiyama-kai (朝日山会) was established in 1926. To keep up with modern times and stay innovative, it launched sparkling sake in 1969 and junmai in 1971. The Kubota (久保田) brand was introduced in 1985 by the then-president, Hirasawa Toru (平澤亨), and production manager, Shima Eiji (嶋悌司). As the tastes of the urban population changed and local demand was declining, Asahi Shuzō focused on tanrei karakuchi (淡麗辛口), light and crisp, sake and thereby created a new market. In October 2020, it released its first liqueur, its yuzu-based Honyuzu (本柚子).

This is a very popular sake, a junmai daiginjo (fruity with hints of grapes, pears and nutmeg) brewed according to the Yamahai method, resulting in deeper flavour and complexity. Crisp, yet smooth and clean. The brewery recommends to consume it at room temperature; we had it chilled, and it was sublime with sashimi.
