Hokushika's description wasn't wrong: the first impression was sweet and refreshing, with a strong aroma of koji and umami. Sweet finish devoid of any acridity. Very elegant, discreet and, it has to be said, very reasonably priced considering its quality. We had it with sashimi, and it was a perfect pairing.
