I'm really into Japanese pickling. As such, I thought it would be a great exercise to translate content to English, then try to translate it back. I haven't gotten the initial translation really well, so I would appreciate help regarding a few phrases!

夏〜秋にかけての漁期に大量にとれるママカリ。保存食としては酢漬けがポピュラーだが地元にいくとにぎり寿司スタイルのママカリ寿司や刺し身、煮付けなど様々なスタイルで楽しめる。
Mamakari is caught in large quantities in summer to fall in the fishing season. As for preserved foods, when going toward pickled food's popularity in hometowns, the giri sushi style of mamakari sushi and sashimi among others, vegetables or fish boiled in soy sauce etc., there are various styles for you to enjoy.

そしてペロっと食べれる - totally unsure of what it means

あまりにもご飯が進むので - Because too much rice advances (? means you need a lot of rice to eat it)

夏〜秋にかけての漁期に大量にとれるママカリ。
夏~秋にかけて and 漁期 are in apposition there, so it's more likely "in the fishing season, summer to fall".

保存食としては酢漬けがポピュラーだが地元にいくとにぎり寿司スタイルのママカリ寿司や刺し身、煮付けなど様々なスタイルで楽しめる。
保存食としては酢漬けがポピュラーだが地元にいくとにぎり寿司スタイルのママカリ寿司や刺し身、煮付けなど様々なスタイルで楽しめる。 makes it easier to understand, maybe?

保存食としては酢漬けがポピュラーだが is a clause introducing the following one.
地元にいくと is a conditional clause modifying 楽しめる.
にぎり寿司 is a single word, not ぎり寿司.
にぎり寿司スタイルのママカリ寿司, 刺し身 and 煮付け are three examples of 様々なスタイル.
で indicates the state/manner the action is done in 様々なスタイルで, as same as みんなで作る or 笑顔で話す.

You need to interpret what the subject of 楽しめる is from the context, which is not mentioned. (Another interpretation; the subject is "people in general" and the object is not mentioned, is also possible, though.)

そしてペロっと食べれる
ペロっと is an onomatopoeia to express "(to eat) easily".
食べれる is a slangy potential form of 食べる, i.e., a variation of 食べられる.

あまりにもご飯が進むので
ご飯が進む is a set phrase, meaning "to have a good appetite/to give one a good appetite," specifically for eating rice (thus, mamakari is too delicious, so you can't stop eating rice with it).
