How do I say, for example, "I like meat more than fish."

1) 肉は魚より好きです。(If this is the right one, where would I use 私?)

2)私は肉が魚より好きです。

3)私は魚より肉のほうが好きです。

4)魚は肉のほうが好きです。(If this is the right one, where would I use 私?)

Or is there any other way to say that?
 
#4 means "Fish likes meat (more than something)." The rest is all correct. You don't need to say 私 when it's obvious from the context.
You can also use (私は)肉のほうが魚より好きです。 and (私は)魚より肉が好きです。, of course.
