Is my interpretation correct that: 1. means "I want to take revenge even if it means going as far as dying." and 2. simply means "I want to take revenge before/until I die."?

Does the ~するまで structure always show "until(a time)"? Or are there exceptions where it could mean extent?

While we're on-topic, how does the nuance differ between まで and までに?

Yes.

Yes. No.

まで means までずっと, whereas までに is for "sometime before ~".
: a masterpiece you should read repeatedly until you die
: a masterpiece you should read/finish reading until/before you die
e.g.
I kept talking with her until dawn.
I talked with her (sometime) before dawn.

I kept sleeping until noon.
I went to bed (sometime) before noon.
