Founded in 2022, the Japan Craft Sake Breweries Association (クラフトサケブリュワリー協会) defines "craft sake" as a new genre of sake on sake using sake brewing techniques and rice as an ingredient. It incorporates processes not legally allowed for traditional sake. For example, "doburoku" is one type of craft sake. Sake involves "squeezing" (separating the sake from the sake lees), but Doburoku is drunk without squeezing. Adding secondary ingredients such as fruits and herbs has also created many new flavours of sake. Although made from rice, doburoku is a free and diverse alcoholic drink not bound by the rules of sake.
